Historical region of Bucovina is part in Ukraine and part in Romania. The rich heritage is due to being occupied by the Austro-Hungarians and transformed into a hub for people to move to. They were granted tax exemptions to settle in an area that was mostly forests. Nowadays Romanians, Ukrainians, Polish, ethnically Roma people, Hutuli (similar to Ruthenians), Germans, Austrians and Jewish individuals influenced the culture here (some no longer live here due to the Holocaust and Communism but you feel their presence in the food)
Scrajele – Bucovina Chips
Are they chips? No. But they go well with dips. The way we eat them is with shepherd’s cheese (branza de burduf), porc fat (slanina), raw onion (even Dracula is afraid of that), and optionally a garlic sauce. It might scare off your date, but your heart will forever remain in Bucovina! This is the definition of a guilty pleasure.

Sweet cheese dumplings
The best ones are made in the oven with sour cream and sugar. It is a culinary masterpiece that showcases why Bucovina is so special.

Porcini soup or Porcini mushroom stew
Porcini mushroom (Hribi) grow really well in this area and there are a lot of people that supplement their income by picking these mushrooms. Porcini are the royalty of flavour in this part of Romania and households have their own magical recipes. Usually, people that don’t like mushrooms tend to like hribi as it has a meaty texture and the taste is different from other mushrooms. Also, porcini soup can be vegan.

River Trout
It can be fried, on the grill, smoked or in a sour cream sauce, what we guarantee is that it is going to be tasty. Trout grows in the mountain rivers of Romania and is a stapple of the region, it is difficult to catch but you can find many fish growers that offer fresh river trout. I grew up catching fish with my cousin

Tocini – Potato Pancakes
The magic potato pancakes fill my heart with joy! I honestly prefer the savory version with no sugar but this is so nice it actually lets you choose the version most of the time. Still, the best ones are made by Dracula’s mom! Second best look below:
